Pasta-less Turkey Lasagna

That’s right, you read the title correctly. But I’m sure you’re thinking, “hmm maybe she used zucchini or egg plants as the pasta substitute?” Nope, I didn’t use anything! It’s just simple, meat sauce, cheese, and more cheese lol. This recipe screams KETO, low carb high fat, seems like the way to go. Trust me you won’t even notice that the pasta is missing. Give my easy recipe a try !

Ps – low fat substitutions listed at the end

Ingredients

1 lb of ground turkey

6 blended tomatoes or a 24 oz can of crushed tomatoes

1 container of ricotta cheese

2 cups of shredded sharp cheddar cheese

2 cups of shredded mozzarella cheese

2 eggs

2 tbsp thyme

2 tbsp of oregano

1 tbsp of cumin

1 tbsp of red chili flakes

Salt

Pepper

1 chopped yellow onion

1 chopped green bell pepper

Preheat oven to 365

Begin to season ground turkey with salt, pepper, and ground garlic power. Add ground turkey and chopped yellow onions in a pan . Begin to Brown the ground turkey on medium heat, stirring occasionally for 10 minutes. Once done, add in crushed tomatoes. Continue to simmer for the next 15 minutes, while adding in above seasonings. At the 15 minute mark, add in the chopped green bell peppers. Continue to cook for 7 more minutes. Remove from heat.

In a bowl begin to mix (whip) 1 1/2 cup of ricotta cheese with half a cup of water, into a nice creamy texture. (Add more water if needed)

In a small baking dish, begin to layer the bottom of the pan with 2 cooking spoonfuls of meat sauce, until covered. Next sprinkle the cheeses on top, next using a spoon, sparingly whip ricotta cheese for the next layer. Next using a fork, sparingly sprinkle eggs over the layer of cheese. Now repeat step 1 by adding sauce, then cheese etc.

When at the top layer, cover with mozzarella cheese.

Cover with foil

Begin to bake for 20 minutes covered. Remove the foil and bake for an additional 5 minutes.

Let stand for 10- 15 before serving.

Low fat option – substitute ricotta cheese for cottage cheese

Substitute sharp cheddar cheese for part skim Milk cheese.

Peppered Fish

This recipe has been requested by so many of my followers. I finally have time to share the secret recipe . This is my quick version of how to make peppered Fish. Its a yummy low carb, keto-diet approved meal. Give this easy recipe a try, enjoy the ride back to the motherland .

Ingredients

2-3 Medium whole Tilapia (descaled and fins removed )

6 small cubes of knoor

2 red bell peppers

1 tomato

2-3 scotch bonnet

1 tbsp. of thyme

1 tbsp. of paprika

1 tbsp.Ā  garlic powder

1 tbsp. of ginger

1 tbsp. of brown sugar

2 tsp of salt (1 for sauce, 1 for fish)

1 red onion

thumb size fresh ginger

Pre heat oven to 400F

Prep

In a bowl combine spices, 4 knoor cubes, and sugar. Set aside

Blend the red bell pepper, 1/2 red onion, 3 garlic cloves (or 4 tbsp. of mince garlic), thumb size of ginger, tomato, and scotch bonnet. Set aside

Meanwhile, add 1/4 cup of oil in a pan with 1/2Ā chopped onions. Allow to fry for 1-2 minutes on medium high heat. Next add in the pepper blend with the 2 remaining knoor cube,Ā and allow to fry for the next 10 minutes. Set Aside

Method

Wash fish and pat dry. Begin to score the fish ( make 3 diagonal slices in the skin ). Using a brush, begin to baste the fish with oil, on both sides.Ā  Begin to sprinkle your spice blend on top of fish , making sure to insert into the score lines of the fish. Use your hand to massage spices into the fish.Ā  This may seem odd, but make love to the fish :0)

Place fish on bakingĀ rack that’s on top of a baking sheet.

Begin to bake,Ā each side forĀ 20 minutes. (flip over after the first 20 minutes and re-baste with oil. This helpsĀ with the cooking processĀ ).

After baking , apply a cooking spoon of your pepper sauce on top of the fish. Spread out evenly. Broil (500 F) for 3-5 minutes. Remove from heat, garnish with chopped parsley and onions. Oya Enjoy!!

Ofada Stew


Ofada stew is a very popular stew native from Nigeria. It is a well know Yoruba stew. I also have another recipe on my blog called ayamase which is also known as Ofada or Designer stew. Whats the difference? Ofada uses only red tatashe ( bell pepper). Try my simple recipe below.

Ingredients

6 Red bell peppers

2 medium yellow onions

1 medium chopped red onion

1  and 1/2 cup of palm oil

4 habanero (red if possible)

1/4 cup of iru (locust beans )

5 boiled eggs

1/4 cup cray fish

2 lbs of meat, shaki,ponmo

1/2 cup meat broth

dry fish

3 maggi cube


Prep

Season your meat of choice. Boil with onions and maggi.  Separate meat from broth, set aside when done.

Directions
Blend all red bell peppers, 1/2 yellow onion, and 3 habenero until smooth. Place mixture in a strainer to drain the excess water. Set aside.


In a separate pot pour in the oil and begin to heat it up on a medium-high setting. Make sure the pot is covered. Leave the pot covered for the next 10 minutes. Once it has reached 10 minutes turn off the heat . DO NOT OPEN THE POT. Leave the pot to cool off for the next 10 minutes. Your  palm oil is now bleached.

Once cooled off open pot and add in sliced red onion and the iru. Put back on medium high heat and begin to fry for the next 3-5 minutes.


Next add in the red pepper mix and continue to fry for 3- 5 mins.

Next add in your meat, dry fish,cray fish,1/2 cup of broth, eggs, and 2 maggi cubes.


Continue to cook for the next 20 to 30 minutes on low medium heat. You will notice oil rising to the top. Remove excess oil by spooning it out.


Enjoy

Low Carb Breakfast Sandwhich

One of my followers asked me to come up with some low carb breakfast options. The first thing that popped into my head was a low carb breakfast sandwhich. Easy to make in less than 2 minutes, try my easy recipe today.

Ingredients

2 tsp of coconut flour

2 large eggs

1 pinch of baking soda

1 serving of sausage or bacon

1 slice of american cheese

1 tbsp of melted butter


In a bowl combine 1 egg, coconut flour, and the baking soda. Mix well.

Butter a ramekin or a small round bowl, pour bread mixture into bowl and microwave on high for 1 minute.

Remove bowl from microwave, allow to cool off for 30 seconds. Using a spatula, round the edges and remove the bread from the bowl, slice in half and place aside.

In a pan prepare your egg the way you like it, either scrambled, sunny-side up, or fried.

Also fry your sausage or bacon and set aside.

Now its time to build your sandwich, use one piece of bread as the bottom layer, place your sausage then eggs on top. Layer with Ā the slice of cheese next and then 1 more piece of bread.

Enjoy

This meal is Keto approved.

P.S- If you are not following the keto diet and you want to cut some of the fat out, try these next tips. Ā Use egg whites for you eggs in the sandwhich, replace cheese with 1% fat Ā mozarella cheese, or Ā use turkey sausage of turkey bacon.

Buttery Cilantro-Lemon Shrimp

I needed some kind of protein to add to my salad and of course Shrimp was the perfect idea. SautƩed with garlic, butter, cilantro, and lemon these shrimp were to die for. It took my salad to another level. To all my keto lovers, you will love this recipe. Let me know what you think!

Ingredients

3- TBSP of unsalted butter

1 lb of raw, peeled shrimp

2 tsp of garlic powder

1/2 tsp of salt

1/2 tsp of paprika

1 tsp of black pepper

3 tbsp of minced cilantro

1/2 lemon sliced thinly

2 tbsp of lemon juice

3 cloves garlic, minced

Season shrimp with above seasonings and lemon juice, mix well.

Heat up a skillet on medium-high heat. Add in 2 tablespoons of butter, allow to melt. Also add in sliced lemon.

Once butter is melted, add in minced garlic, allow to saute for about 1-2 minutes.

Next add in 2 Tbsp of cilantro, Shrimp, and the last tablespoon of butter.

Lower heat to medium .

Continue to cook shrimp 1-2 minutes on each side.

Once Shrimp is done ( turned pink), sprinkle with 1tbsp of chopped cilantro.

Enjoy !

P.S.- add shrimp into a salad or enjoy with zero noodles.

 

Sticky Low Carb Sriracha RibsĀ 

Don’t we all love ribs!! But if your following a low carb diet, the barbecue sauce used (or any sauce) can completely take up all your carbs for the day. Try my quick low carb sriracha glaze recipe and lick your fingers away. 

Ingredients 

1 lbs of pork/ beef ribs 

3 tbsp of olive oil 

1/4 cup of soy sauce (lite) 

1/4 sriracha 

Sesame seeds 

1/4 of a lemon

1tsp of garlic

1/2 teaspoon of grated ginger 

1 packet of stevia 

Season and bake ribs for 45 mins on 350 degrees, until done.

Begin to heat up a sauce pan, add in oil, ginger and garlic. SautƩ on low heat for about 30 seconds. Next add in soy sauce and sriracha. Mix well and squeeze in lemon. Add in stevia, allow to simmer for 30 seconds on low heat.

Using a basting brush, brush glaze upon ribs. Garnish with sesame seeds and chopped parsley. 

Enjoy your guilt free ribs! 

Optional

Spiralize 1 cucumber, place ribs on top. Use sun dried tomato vinaigrette as dressing enjoy. 


Cauliflower Fried RiceĀ 

The perfect substitute for rice is Cauliflower. Lower in carbs and calories, but yet very fulfilling. Recipe below. Check out my Youtube link to the recipe, https://youtu.be/TGsl7aNi63Q .
Ingredients 

1/2 large cauliflower head 

1/2 yellow onion (chopped)

3/4 frozen mixed vegetables 

1/2 red  bell pepper (chopped)

4 strands of green onions

1 egg

Coconut oil or olive oil

3 oz of uncooked shrimp 

1 tsp of garlic powder and onion powder

1/2 tsp of black pepper and lite salt

First chop cauliflower into large florets and place into a food processor or blender. Begin to pulse, until it forms into a rice texture, keep aside on a plate with paper towel.

In a wok or pan, heat up 1.5 tablespoons of oil. Add in the onions, green onions, and red bell pepper. Continue to sautƩ for 3 minutes, maintaining your heat of medium-low.

Next add in the mixed vegetables.

Begin to season with the above posted seasonings. 

Next add in shrimp, cauliflower, and the egg. 

Continue to sautƩ and mix for the next 5 minutes.

*optional -add in 1 table spoon of soy sauce

Creamy Pesto Salmon

Hello guys, I’m back lol. I know, I know, I haven’t blogged in a while. So many things happening all at once can make one go on a hiatus. But on another note I’m back with a yummy recipe. Low in carbs and scrumptious at the same time. What makes it so yummy is the creamy pesto blend .

Ingredients

1 lb of salmon ( cut into 2-3 pieces )

1.5Ā tbsp of pesto

1/2 cup of whipping cream or milk

3 oz of cream cheese

chopped parsley

olive oil

salt

black pepper

cayenne pepper

thyme

Take fish and sear it ( make a cut in the middle on the skin side )

Baste fish with olive oil using a brush. Ā Season fish with salt, black pepper, thyme and cayenne pepper to your own preference.

Heat up a pan with oil and place fish skin down. Pan sear on medium high heat for 4-5 on each side until done ( note the change of color from pink to white )

In a separate pot, heat up( medium heat) the cream cheese and cream/ milk. Whisk to mix completely. Add in the pesto and continue to mix.

Turn off heat, if it become to thick add a Ā little bit of water and whisk vigorously.

Serve fish with pesto sauce on top, sprinkle parsley for an added touch.

IndomieĀ 

img_6460Indomie is a brand name to a popular type of noodles in Nigeria. You can make it with many different type of additives. Below is my version:

2 packages of indomie noodles

1/2 yellow onion

1-2 habanero pepper

1 small tomatoe

1/2 cup of corn beef

1 package of sardine

2 eggs

1/2 cup of oil

Boil eggs, peel and set aside.

Begin to prep by chopping up onions, tomatoes and habanero.

Begin to boil water in a pot add in the indomie noodles. Allow to boil for only 3 minutes. (You don’t want it too soft ) Drain and set aside.

In a pan pour in some oil, begin to sautƩ onions, tomatoes,corn beef, and habanero for about 3- 5 minutes. Add in drained noodles. Next add in the seasoning packets and 3 tbsps of oil.

Begin to mix/fry for 2-3 minutes.

Place on plate, add sardine on top with boiled eggs.

Enjoy
