Beef Fried Rice (Nigerian Style)

Fried rice is a staple meal in Nigeria, the country that I come from. Typically fried rice is made with shrimp or chicken. But Bae made a special request today, he wanted fried rice with beef. I gladly accepted the challenge. Hope you guys enjoy this recipe

Ingredients

1 1/2 lbs of fine diced stewed beef

2 yellow onions

3 habanero

thumb sized fresh ginger

2 1/2 cups of parboiled rice

1 maggi

curry

1 small bag of frozen mixed vegetables

1 large green bell pepper

 

Season your beef with your favorite seasonings ( salt, pepper, ginger, thyme,garlic powder, onion powder,Adobo etc ) Add in 1 maggi cube and 1 chopped yellow onion. Also add in 2 habanero and chopped ginger. Cover your pot and cook for 20 -30 minutes until done.  Drain meat and seat aside.

Pour 1 and 1/2 cups of water into your broth. Next pour in parboiled rice into the broth mixture ( make sure the broth is covering the rice) Begin to cook on medium heat until boiled. Cover the pot and allow to cook until all the liquid is dried up, making sure the rice is not to soft.

Ok now time for the frying part.

Set up your ingredients, like above. I  like to fry my rice in batches. So in a frying pan heat up 2 tbsp of oil. Throw in a small handfull of onions and green pepers, saute for 30 seconds. Then next add in a handful of veggies, stir fry for one minute. Next up add in 1 hand full of beef. Then finally add in the rice. Stir fry for another 1 minute.  Season each batch with curry powder. Repeat the above steps for every batch.

When done combine all the batches together under medium low heat and stir with spoon for 2 minutes. Thats it your done! Enjoy
