Curry Chicken

After living on an island for 2 years, I better know how to make some Caribbean style curry chicken . Enjoy my recipe !

Ingredients:

  • 2-3 lbs of chicken
  • 1 green bell pepper and 1 red bell pepper
  • 1 bunch of green onions
  • 1 yellow onion
  • vegetable oil
  • 3 carrot springs
  • 4 medium potatoes
  • 2 habanero
  • 2 tbsp of minced garlic
  • Seasonings
    • thyme
    • paprika
    • Curry powder
    • garlic powder
    • ginger powder
    • black pepper
    • all spice
    • knoor
    • onion powder
    • 4 bay leafs
  • fresh thyme springs (extra)

Process

Wash and chop up all vegetables and place aside. Wash chicken, pat dry with paper towel. Drizzle a small amount of oil across chicken, season with above seasoning generously . Marinate in refrigerator for at least 30 minutes. In non stick pot pour enough oil that will cover the bottom of the pot, turn heat to medium- high . Pour in 1.5 tbsp of curry. Begin to fry your curry for 2 minutes . Next add in the chopped onions, peppers, green onions, minced garlic, and habanero. Allow to fry for 5 minutes while stirring. Next add in seasoned chicken, allow to sear for 3 minutes. Add 1c of water just enough to reach the top of the chicken . Pour in chopped potatoes/ carrots. Cover pot allow to cook on medium for 20 minutes until Chicken is done.

** if sauce is to thin you can mix some of the sauce with 2-3 tablespoons of corn starch

Keto Shrimp and Cauliflower Grits

 

Shrimp And cauliflower grits 🔥🔥 In honor of black history month @keto4thekulture is profiling different meals that reflect our culture, in the keto way. My contribution was making and old time classic shrimp and grits, but with Nigerian fusion, using Suya shrimp. And of course cauliflower as the grits base!

Ingredients

1 package of Birds eye view frozen Mashed Cauliflower (12 oz) (sour cream and chives)

1 lb of large raw shrimp

3-4 pieces of bacon

1/2 c heavy whipping cream

1/4 c chicken stock

3 springs of green onions (chopped)

1 tbsp of Worcestershire sauce

2 tbsp of lemon juice

1/2 yellow onion chopped

1 tbs of mince garlic

1 tbs of butter

1/2 cup of Parmesan shredded cheese

1/3 c sharp cheddar cheese

Cajun seasoning

Prep

Begin by seasoning the shrimp with Tony’s ( or an Cajun seasoning), black pepper, and salt. Set aside to marinate while you prepare the onions.

Follow the instructions on the package of the frozen cauliflower, and set aside.

Lets start Cooking !

Start frying bacon in pan until done, remove the bacon and set aside.

Leave the oil in the pan, maintain the heat level on med-low, add in the butter.

Next add in the shrimp and the yellow onions, half of the green onion

Cook for 3-5 minutes while flipping sides, remove from the pan.

Next, de-glaze your pan by adding in the chicken stock and lemon juice. (Stir)

Add in the Worcester sauce and the heavy whipping cream

And lastly add in the Parmesan cheese.

Stir slowly while allowing the sauce to simmer on low for 3 minutes, set aside.

Combine in a separate bowl your cauliflower, cheddar cheese, 1/2 tbsp of butter.

Mix well

Plate your food, cauliflower grits first, then shrimp and the sauce. Lastly top with chopped bacon and green onions

Ofe Nsala

Hey guys, first thing I want to do is apologize for being MIA. When you get married, your whole life changes! I went from going to school and working (thinking about myself) to now a full-time wife who has think about what her husband will eat Lol. I am so thankful for this new chapter in my life, because of my husband it has given me new recipe ideas and inspiration.

Ofe Nsala (white soup) is One of my all-time favorites Nigerian soup. It’s a white based soup made with fresh fish and uziza leaf. Many tribes in Nigeria make this soup in different versions. As you know I’m front the Igbo tribe, we make this soup with the native leaf Uziza or utazi leaf.

I consulted my sister in-law for some tips on how to make ofe-Nsala, the traditional way. She came all the way through, Thanks Vi-Vi.

I hope you enjoy this authentic recipe, it will surely bring home to your taste buds.

Ingredients

1 large catfish (skin on, chopped into 6-8 pieces)

1/4 c of crayfish

2 Tbsp of pepe soup mix

1/4 cup of uZiza leaf

2-3 pieces of cut yam

2 Tbsp of red pepper

3 Maggi cubes

1 tbsp of ogiri

1 small onion

Stock fish ( I uses a small amount )

1 small dry fish

2 pepe

Prep

Boil yam and stock fish until tender. Mash yam in mortar or blend with small water in blender.

Soak dry fish in warm water

Blend 2 pepe (habanero or scotch bonnet) with small water

Begin

Take the cat fish and place into a large pot. Cover the catfish with water. Begin to season with 1 Maggi cube, onion powder , salt and pepper. Add in 1 small chopped onions. Bring to a boil, cook only for 6-10 minutes. You want to parboil the fish, to make a fish broth. Remove fish from the broth. (your fish should be half way cooked)

Next Add into the broth, the crayfish, ogiri , pepper, Maggie cubes, pepper soup mix, and uziza leaves. Also add in your dry fish and stock fish. Bring to a boil while stirring.

Next add your pounded yam paste, table spoon by table spoon. Continue to cook on medium- high heat while stirring . The pounded yam will melt into the soup. Continue to add more pounded yam to your preference, depending on how thick you want your soup.

Lastly add your catfish back into the soup . Continue to cook on low for about 5-10 minutes making sure your catfish is done.

Enjoy with Pounded yam.

Pasta-less Turkey Lasagna

That’s right, you read the title correctly. But I’m sure you’re thinking, “hmm maybe she used zucchini or egg plants as the pasta substitute?” Nope, I didn’t use anything! It’s just simple, meat sauce, cheese, and more cheese lol. This recipe screams KETO, low carb high fat, seems like the way to go. Trust me you won’t even notice that the pasta is missing. Give my easy recipe a try !

Ps – low fat substitutions listed at the end

Ingredients

1 lb of ground turkey

6 blended tomatoes or a 24 oz can of crushed tomatoes

1 container of ricotta cheese

2 cups of shredded sharp cheddar cheese

2 cups of shredded mozzarella cheese

2 eggs

2 tbsp thyme

2 tbsp of oregano

1 tbsp of cumin

1 tbsp of red chili flakes

Salt

Pepper

1 chopped yellow onion

1 chopped green bell pepper

Preheat oven to 365

Begin to season ground turkey with salt, pepper, and ground garlic power. Add ground turkey and chopped yellow onions in a pan . Begin to Brown the ground turkey on medium heat, stirring occasionally for 10 minutes. Once done, add in crushed tomatoes. Continue to simmer for the next 15 minutes, while adding in above seasonings. At the 15 minute mark, add in the chopped green bell peppers. Continue to cook for 7 more minutes. Remove from heat.

In a bowl begin to mix (whip) 1 1/2 cup of ricotta cheese with half a cup of water, into a nice creamy texture. (Add more water if needed)

In a small baking dish, begin to layer the bottom of the pan with 2 cooking spoonfuls of meat sauce, until covered. Next sprinkle the cheeses on top, next using a spoon, sparingly whip ricotta cheese for the next layer. Next using a fork, sparingly sprinkle eggs over the layer of cheese. Now repeat step 1 by adding sauce, then cheese etc.

When at the top layer, cover with mozzarella cheese.

Cover with foil

Begin to bake for 20 minutes covered. Remove the foil and bake for an additional 5 minutes.

Let stand for 10- 15 before serving.

Low fat option – substitute ricotta cheese for cottage cheese

Substitute sharp cheddar cheese for part skim Milk cheese.

Buttery Cilantro-Lemon Shrimp

I needed some kind of protein to add to my salad and of course Shrimp was the perfect idea. Sautéed with garlic, butter, cilantro, and lemon these shrimp were to die for. It took my salad to another level. To all my keto lovers, you will love this recipe. Let me know what you think!

Ingredients

3- TBSP of unsalted butter

1 lb of raw, peeled shrimp

2 tsp of garlic powder

1/2 tsp of salt

1/2 tsp of paprika

1 tsp of black pepper

3 tbsp of minced cilantro

1/2 lemon sliced thinly

2 tbsp of lemon juice

3 cloves garlic, minced

Season shrimp with above seasonings and lemon juice, mix well.

Heat up a skillet on medium-high heat. Add in 2 tablespoons of butter, allow to melt. Also add in sliced lemon.

Once butter is melted, add in minced garlic, allow to saute for about 1-2 minutes.

Next add in 2 Tbsp of cilantro, Shrimp, and the last tablespoon of butter.

Lower heat to medium .

Continue to cook shrimp 1-2 minutes on each side.

Once Shrimp is done ( turned pink), sprinkle with 1tbsp of chopped cilantro.

Enjoy !

P.S.- add shrimp into a salad or enjoy with zero noodles.

 

Beef Suya 

Suya,Suya!! What is Suya ? Some are wondering. Suya is a type of spicy meat on a skewer . Most people use beef or chicken to make Suya. Suya spice is a special blend of peppers and spices. The combination of all the spices is heavenly. Aunthentic Suya spice contains some local herbs straight from the motherland. 

I was tired of going to the African store and buying suya spice, that was so bland. Through frustrations I was inspired to make my own authentic Suya spice. After conducting research, traveling back to Nigeria to get some ingredients, and many failed errors and trials, I finally invented my own Suya spice!

Recipe below

Ingredients 

1 lb of beef (eye round , stew meat, or chuck ) 

1/2 cup of KegosKitchen Suya spice 

1/2 cup of oil 

Skewers 

Pan with a wire rack (or cover baking sheet with foil) 


Preheat oven to 340 degrees

Pre soak skewers in cold water for at least 30 minutes to prevent burning.

Chop up beef into thin pieces, as pictured above 

Pat dry beef with paper towel.

Sprinkle meat with oil and mix well. 

Begin to string about 4 pieces of meat on a skewer.


Pour Suya spice on a flat plate. 


Begin to dab each skewers in the Suya spice making sure to cover all areas of the meat. 

When done place meat on baking sheet or wire rack. 


Bake for 20 minutes. Remove and flip over. Bake again for another 20 minutes. 

Lastly Broil (500 degrees )  the Suya for 3 minutes to achieve that smokey grill taste. 

Sprinkle extra Suya spice on top, and garnish with chopped onions and tomatoes. Enjoy 👌🏾 

Egusi Soup

So I’m finally putting up my egusi soup recipe. Egusi soup is one of my favorite type of Nigerian foods. So rich and yummy. Its easy to make. I hope you enjoy this recipe.

Ingredients

1/4 cup of palm oil

3 habanero

1 cup of ground egusi

1/2 teaspoon of ogiri

2 maggi cubes

2 lbs of meat of choice ( goat, chicken, hen)

1 lb of shaki (cow stomach)

1 cup of stock fish or 2 big pieces

1 large piece of dried fish

Dried  red pepper

1 cup of chopped spinach

1/2 cup of bitter leaf

1 red bell pepper

2 yellow onion

1/4 cup of ground crayfish

1 tbsp of ground uziza

Preparation

Chop up one onion and one habanero. Season meat with salt, pepper,curry, onion powder, garlic powder, red pepper, and paprika. Place the meat in a pot or in a pressure cooker. Add in chopped onion, 1 chopped habanero, and 1 maggi cube. Fill pot with water, covering the meat. Begin to boil. If your cooking goat meat, always check to make sure there is enough water, refill as need. If your cooking hen or chicken it should be done in 30 minutes. If your cooking goat meat expect a longer wait time. Once meat is done, remove meat from your stock, and place aside.

In a separate pot, boil your shaki and stock fish. It should take about 30-45 minutes to be tender. drain and place aside.

Blend red bell pepper, 2 habanero, and ogiri. Place aside. (This is your pepper mixture)

Soak your dried fish in luke warm water. Remove the bones.

Method

Add 1/2 chopped onion to a pot. Pour in your palm oil. Heat up until you notice smoke arising from the oil. Next add in your egusi and stir. Continue to fry for 2-3 minutes while mixing. Next add in your pepper mixture, continue to stir and cook for the next 5 minutes on med-hi temperature. Next add in you meat stock that should add up to 2 cups. ( if your meat stock is not enough, just replace with water). Add in your crayfish, uziza, 1 tbsp of red pepper and 1 maggi cube, and continue to stir. Next add in all your meat, shaki and stock fish. Continue to now add in your spinach and bitter leaf.

Last but not least add in your dried fish. Mix everything together and let simmer on medium heat for 5-10 minutes. Enjoy with a side of swallow!

Sweet Potato Lasagna

Lasagna, o how we love lasagna. But if you are watching your weight, eating lasagna more that once in a week is a bad idea. That’s why I hopped on the challenge when one of my followers asked me for a healthy lasagna recipe. Sweet potato, is loaded with nutrients and is a perfect substitute for pasta. I also replaced ricotta cheese with cottage cheese, so good. I hope you enjoy this healthy recipe

Ingredients :

1-2 large sweet potato

1 -2 lbs of ground turkey

1 large can of tomato sauce

bunch of fresh parsley

bunch of fresh basil

1 yellow onion

1 small red bell pepper

1 small green bell pepper

2 cups of cottage cheese

1 egg

salt

black pepper

2 cups of chopped kale

italian seasoning

2 tbsp of minced garlic

2 cups of low fat mozzarella

First preheat your oven to 365 degrees.

Next begin to slice your sweet potatoes into thin uniform slices or use a mandolin slicer. Chop up all your onions,peppers and set aside.

In a bowl season the the ground turkey breast with salt, pepper, italian seasoning, garlic and onion pepper. In a pot heat up 2 tbsp of olive oil. Add in turkey breast, chopped onions, and peppers. Cook the mixture for about 5-8 minutes, turning frequently until brown. Add in tomato sauce, continue to simmer . Add in chopped kale, garlic, and a small bunch of chopped parsley. Continue to simmer on low for 5-7 minutes. Set aside.

In a bowl combine greek yogurt and egg, mix with a fork.

In a medium casserole, line the bottom of the casserole with a thin layer of meat sauce. Next layer the pan with the sweet potato, making sure to overlap each slice (as seen below).

Next add sauce using a large spoon to pour  it upon the sweet potato, using the back of the spoon to spread. Next add in the cottage cheese mixture. Next place basil leaves on top. Then sprinkle a light mozzarella cheese on top .

Repeat these steps for the next 2 layers. When you reach the last layer, cover with sauce and cheese. Cover pan with foil.

Bake for 45 minutes until sweet potato is done.  Sprinkle with chopped parsley.

Very Berry smoothie

After a hard workout it’s very important to replenish your body with protein. This protein shake is full of antioxiandants. I used my favorite protein powder Cellucor. Try out my yummy recipe below.

Ingredients

1 scoop of vanilla protein

1/2 cup of blueberries

1/2 cup of strawberries

1 cup of skim milk or almond milk

1/2 cup of ice

Blend all ingredients in a blender for 2 minutes and enjoy.

 

Cajun Five Cheese Potato Casserole

Anything with 5 cheeses must be good !! This recipe is going to explode your taste buds

Ingredients 

8 russet potatoes

1/2 cup Colby cheese

1/2 cup of sharp cheddar cheese

1/2 cup  mozzarella cheese

1/2 cup gouda cheese

1 tsp of garlic powder

2 tsp of cajun seasoning

salt

black pepper

1 cup of cream

3 tbsp of butter

1/2 cup of grated parmesan

1/4 cup of bread crumbs

1 tbsp of powder

Preheat your oven to 350 degrees. Wash and cut your potatoes in half. Season with salt and black pepper. Place on oiled baking sheet. Bake/ roast for 45 minutes until done. (Remember to flip at the half way mark)

While your potatoes are baking, lets start making the cheese sauce.

In a pot on medium heat, melt 3 tbsp of butter in 1/2 a cup of cream. Add in flour and begin to whisk quickly.Add in all your cheese except for the parmesan. Continue to mix until smooth.

Next add in your roasted potatoes and mix for 2 minutes. Add in garlic and cajun spice.

Take the potato mixture and place in a baking pan. Place in oven for 10 minutes at 350 degrees.

Top with parmesan, bread crumbs and parsley. Enjoy
