Baked Moi Moi Cups

Moi Moi also known as bean cake, is a popular type of food in Nigeria, made out of beans, onions and peppers. Usually one can enjoy them in steamed form. But baking is so much easier. Also making them into cup form turns it into an easy on-the-go snack or meal. Not to mention this is #fitfam approved. ย I hope you enjoy my recipe.

Ingredients

1 and 1/2 cups of black eye beans

1 chopped onion

1 large red bell pepper

1 tsp of nutmeg

1 tsp of ginger

2 large cooking spoons of palm oil or olive oil

salt

1 maggi cube

1/2 cup of ground crayfish

1 habanero

12 count muffin pan

Preheat your oven to 375 F. Preferably soak your beans over night to loosen the skin. remove skin from the beans.

Combine the beans, habanero, onion,red bell pepper, and 1 cup of war water. Blend until smooth. Pour into a large bowl.

 

In a separate bowl warm your oil in the microwave for about 1 minute. Add in your maggi and mix .

Add in the oil mixture into the large bowl. Also add in the crayfish, nutmeg, ginger, and a little salt

*Be sure to taste your batter, making sure there is enough salt.

With an electric mixer or spatula, mix the batter for a good 3-5 minutes, until smooth.

Oil cupcake pan with oil.

Pour in batter into each cup, making sure no to fill to the rim

Pour water into a baking tray, place muffin tray into the baking tray (the steam from the water will help cook the moi moi)

  • optional: you can now add pieces of egg, corned beef, or fish into your muffin

Cover muffin pan with foil. Place in the center of oven. Bake for 45 minutes. At the halfway mark, make sure there is still water in the baking pan, refill as needed. Check your moi moi with a toothpick by sticking it in the center, if it comes out dry it is done. If its wet, continue to bake for about 5-10 minutes.

Strawberry Cream Cheese French Toast

Need a new brunch idea? Try my recipe, you will never regret it! French toast stuffed with strawberry cream cheese is so yummy and delightful. I got inspired to make this after seeing a picture in Cosmopolitan magazine. Everything came out great and its easy to make. Enjoy

Ingredients

1 loaf of French bread

1/2 cup of chopped strawberries

1/2 of cream or milk

2 tsp of vanilla extract

1 tsp of cinnamon

4 eggs

2 tbsps of butter

6 0z of cream cheese

2 tbsp of brown sugar

In a mixing bowl, combine cream cheese, strawberries, 1 tbsp of brown sugar, ย and 1 tsp of vanilla extract. Mix together until smooth.

Using a sharp knife cute bread into 1 1/2 – 2 inch slices as show below .Using a knife make a pocket, making sure not to cut it all the way through.

Fill each pocket with the strawberry mixture and set aside.

In another bowl mix eggs, 1 tsp of vanilla extract, cinnamon, 1 tbsp of brown sugar, and milk.

In a nonstick pan heat 1 tbsp of butter on medium heat. Take french toast one by one and dip it into the egg mixture, place onto pan. Fry the toast on medium heat until brown, then flip over to the other side . ย ( about 3 -4 minutes each side)

When done serve with fresh strawberries, powdered sugar, and syrup.

Zucchini Crusted Skinny Pizza

Aggh Pizza, the one food that makes me weak at my knees lol. Who doesn’t love pizza? If you dislike pizza, you don’t know what your missing. One of my followers asked me to come up with a Healthy Pizza recipe. I gladly accepted the challenge. I chose to go with a zucchini as the crust. Hope you enjoy my recipe. This recipe is gluten free and Fit fam approved. Quick 30 second video below .

Ingredients

2 large zucchini

1 egg

1 cup of mozzarella cheese

2 TBSP of parmesan cheese

1 tsp of black pepper

1tsp of italian seasoning

1/2 cup marinara or pizza sauce

2 tsp of salt

Optional (my favorite topping)

Basil leaves

8 turkey pepperoni slices

Preheat oven to 450 degrees. Wash and begin to shred the zucchini. Add 1 tsp of salt and mix.ย In a sieve ( strainer ) press down zucchini with a spatula in a mashing maneuver for about 2 minutes to drain the liquid from the zucchini.

Place the zucchini aside for 15 minutes. Next obtain a cloth, handkerchief, or 3 layers of paper towel. Place your shredded zucchini inside and squeeze. Do this as much as you can. You want your zucchini as dry as possible.

In a medium bowl combine the zucchini, egg, seasoning, parmesan, and 1/2 cup mozzarella. Mix well with a spatula. Place parchment paper upon a baking sheet. Pour the zucchini mix and spread evenly into a circle, as pictured below, unto the baking pan.

Bake in oven for 15 minutes or until edges are golden brown.

When done remove from oven. Pour marinara in the center of crust, spread evenly, sparing the edges (crust). Sprinkle mozzarella and continue to add toppings to the pizza.

Return back to the oven for 5-7 minutes until the cheese is melted.

Firecracker Shrimp

 

imageWe all have busy lifestyles. Sometimes we don’t have enough time to prepare meals. That’s why its important to alwaysย quick recipes on handย . This meal took me nothing less than 10 minutes to make! Adding crushed red pepper to your shrimp will surely add an extra kick to your taste buds. ย I hope you enjoy this spicy, quick, and easy recipe.

Ingredients

1 lb of shell free shrimp

2 pinches of red pepper flakes

2 tbsp of extra virgin olive oil

2 tbsp of minced garlic

salt

black pepper

3 tbsp of chopped fresh parsley

1/2 tsp of cayenne pepper

2 tbspย cup white whine vinegar

1 tbsp of light butter

1/4 lemon

Season shrimp with salt, black pepper, cayenne pepper, and garlic powder.

In a skillet heat up oil, add in minced garlic and begin to cook for 1 minute. Next add in shrimp, red pepper flakes, and parsley . Squeeze in the lemon also. Continue to cook on medium heat for 1 -2 minutes. Next add in white vinegar and butter. Continue to stir fr 1 minute. Remove from heat and serve with steam veggies.

 

 

 

 

 

 

Healthy Orange Chicken

I know when the average person hears orange chicken, they immediately think about Chinese food. This is not a chinese food recipe lol. This is a simple fresh and healthy recipe. Perfect for your meal preps for the week.

Ingredients

3 chicken leg quarters

4 small navel oranges

2 lemons

2 Tbsp of blown sugar

1/4 cup of virgin olive oil

3 springs of fresh thyme

2 springs of fresh rosemary

3 tbsp of mince garlic

4 TBSP of light soy sauce

salt

black pepper

paprika

garlic powder

ginger powder

 

 

Score chicken ( 3 slices into chicken) Season chicken with above seasonings, squeeze 1 lemon and 1 orange over the chicken. Cover and marinate in the fridge for 30 minutes.

In a pan heat up oil. Add in fresh herbs, garlic, and sliced up lemon, fry for 30 seconds to infuse the oil.

Add in chicken Rib cage down. Maintain your heat on medium high. Squeeze in 2 Navel oranges on top of chicken. Place oranges face down in pan. ย Cook on each side for 6 minutes and then flip.

At the 20 minute mark pour in the brown sugar on top of the chicken and the soy sauce . Continue to flip after every 6 minute mark. After 3o-45 minutes the chicken should be done. Once done squeeze the last orange on top of the chicken and top with chopped green onions to garnish. Serve with asparagus and Sweet potato.

Waffle Benedict

My cousin came in from out of the country. I wanted to make her something that was sweet and savory. A waffle Benedict was the right choice. Cinnamon waffles with a homemade strawberry glaze, topped with smoked ham and a perfect hollandaise, this meal was so delightful. My benedict recipe is already posted on the blog. Below is how to make the homemade strawberry glaze.

Glaze

1 cup of strawberries

1 tbsp of brown sugar

1/2 tsp of nutmeg

1/2 tsp of cinnamon

Blend strawberries with 3 tbsp of water. Strain strawberry mixture into a pot, two times. Begin to bring strawberries to a boil, add in spices and sugar. Continue to boil on medium low heat for 5 minutes. Top on top of your waffle and enjoy

Jerk Shrimp and Lobster Chow Mein

Todays meal was inspired by my Fitfam Juliet. She sent me a picture of a dish that Ayesha Curry made. She asked me to recreate it, I gladly accepted. I decided to recreate the dish and make it #fitfam approved. From replacing the chow mein noodles with 100% whole wheat pasta and baking the plantain instead of frying, Fitfam would be proud ย  Below is a picture of Ayesha’s Dish.

So here goes my take:

Ingredients

Lite Soy Sauce

oyster sauce

1/2 green pepper

1/2 red bell pepper

1/2 lemon

1 lb of shrimps

1-2 Lobster tools

1/2 head of cabbage

1 onion

olive oil

1 package of whole grain linguini

1 ripe plaintain

jerk seasoning

ginger

salt

2 habanero

cayenne pepper

fresh parsley

minced garlic

butter

Let’s Go

First, cook your pasta for about 7-10 minutes until soft, be careful not to over cook.

Baked Plantain

Preheat your oven to 400 degrees .Coat a baking sheet with oil or nonstick oil spray. Cut your plantain in diagonal slices about 1/2 inch thick. ย Season your plaintain with salt and black pepper. Place on baking sheet and bake for 7 minutes and flip.

Continue to back for another 7 minutes on the other side. Be carful to watch the color, making sure it doesn’t burn. Place aside

IMG_8810Prep (chop) all your veggies, cabbage, peppers and onions and set aside

Jerk Shrimp and Lobster

Wash and dry your seafood. Season with jerk seasoning, salt, black pepper, ginger and cayenne pepper. In a pan heat up 2 tbsp of oil oil, 1/2 chopped onion, and 2 habanero chopped. for about 2 minutes. Next add in 1 tbsp of minced garlic. Sear for 1 more minute. Add in lobster (shell up) and shrimp. Cook on one side for 5 minutes. Before flipping add in 1 tbsp of butter. Squeeze 1/2 of lemon on top of the seafood . Continue to cook for 5 more minutes until done.(shell turned pink). Set aside

Chow Mein

In a pan heat up 3 tbsp of olive oil. Add cabbage, 1/2 chopped onion, bell peppers, and garlic . Stir fry ย for about 3-4 minutes on medium high heat. Next add in 1/3 cup of Lite soy sauce and 1/4 of oyster sauce.

Mix well. Next add in pasta, and stir constantly to blend everything . Continue to stir fry for about 2-3 minutes, top it off with fresh chopped Parsley and cayenne pepper (optional)

Beef Fried Rice (Nigerian Style)

Fried rice is a staple meal in Nigeria, the country that I come from. Typically fried rice is made with shrimp or chicken. But Bae made a special request today, he wanted fried rice with beef. I gladly accepted the challenge. Hope you guys enjoy this recipe

Ingredients

1 1/2 lbs of fine diced stewed beef

2 yellow onions

3 habanero

thumb sized fresh ginger

2 1/2 cups of parboiled rice

1 maggi

curry

1 small bag of frozen mixed vegetables

1 large green bell pepper

 

Season your beef with your favorite seasonings ( salt, pepper, ginger, thyme,garlic powder, onion powder,Adobo etc ) Add in 1 maggi cube and 1 chopped yellow onion. Also add in 2 habanero and chopped ginger. Cover your pot and cook for 20 -30 minutes until done. ย Drain meat and seat aside.

Pour 1 and 1/2 cups of water into your broth. Next pour in parboiled rice into the broth mixture ( make sure the broth is covering the rice) Begin to cook on medium heat until boiled. Cover the pot and allow to cook until all the liquid is dried up, making sure the rice is not to soft.

Ok now time for the frying part.

Set up your ingredients, like above. I ย like to fry my rice in batches. So in a frying pan heat up 2 tbsp of oil. Throw in a small handfull of onions and green pepers, saute for 30 seconds. Then next add in a handful of veggies, stir fry for one minute. Next up add in 1 hand full of beef. Then finally add in the rice. Stir fry for another 1 minute.ย ย Season each batch with curry powder. Repeat the above steps for every batch.

When done combine all the batches together under medium low heat and stir with spoon for 2 minutes. Thats it your done! Enjoy

Spinach and Chicken Stuffed Shells

Who doesnโ€™t love stuffing shells? Sometimes you can get carried away when it come to stuffing food items. But when your trying to eat healthy, stuffing it with spinach and your favorite low-calorie cheese is the way to go. This meal had me looking forward to meal prep. Let me take you through this cheesy goodness.

Ingredients

1 package of Jumbo Shells

1 cup of skim milk Ricotta Cheese

ยฝ cup Parmesan cheese

ยฝ shredded mozzarella cheese

2 tbsp of oil

2 tbsp of minced garlic

1-2 bottles of Marinara (low sodium)

ยฝ cup of breadcrumbs

ยฝ finely chopped basil

1 package of frozen chopped spinach

1 -2 lbs of ground chicken

ยฝ red bell pepper and ยฝ green bell pepper

1 yellow onion

Pre heat oven to 375 degrees. Begin to boil pasta until al dente ( almost done ,boil for 12 minutes). Drain, run cold water over pasta, and set aside.

In a skillet, pour in olive oil, begin to sautรฉ bell peppers and and yellow onions. Once onion and peppers are a little brown add in grounded chicken. Season with salt, pepper, garlic power and onion powder. Continue to mix with spatula, Continue to cook for 5-7 minutes until done. Set Aside

In a large mixing bowl, mix Ricotta cheese, Parmesan cheese, and mozzarella cheese. Remove frozen spinach from package and sweet out excess water, add spinach into the mixture. Add in grounded chicken with 2 cooking spoons of Marinara and mix.

Line the baking Dish with marinara, take each shell and stuff it with the mixture. Continue to line the shells 1 inch apart. When done stuffing pour remaining marinara on top of each shell. Sprinkle Parmesan and Bread crumbs on top of shells.

Cover with foil, place shells in oven and back for 25 minutes. Once done allow to cool and Enjoy !

Healthy Thai Green Curry Shrimp

It’s Thai Time !!! One of my favorite type of foods is Thai food. I love all the ingredients used in making thai food, coconut milk to ginger to lemongrass. This recipe was inspired by my thai loving Sister ๐Ÿ™‚ Hope you guys enjoy the recipe. #Fitfamapproved

Ingredients

1 cup of Thai Green Curry Sauce

2 tsp mince garlic

1 tbsp of minced fresh ginger (or 1 tbsp of ground ginger)

1/2 onion (minced)

1 tsp of curry powder

1 tsp of salt

1/2 tsp of cumin powder

1/2 tsp thyme powder

1/2 tsp of cayenne pepper

1 habanero

1 tbsp of coconut oil

1/2 – 1 pound of shrimp

Brown rice

 

In a pan heat up the coconut oil for 20 seconds. Add in the minced onion, fresh ginger, and garlic. Pan sear for 1 minute. Pour in the green curry, allow to cook for 2 minutes. Next add in Shrimp and the rest of the spices. Allow to cook for 5-7 minutes.
