Plantain Egg Stew Muffins

Being from Nigeria, plantains made with eggs and tomatoes is a standard meal for breakfast. I was thinking how can I have the same meal but on the go and more healthy. Thats when plantain muffins came to mind. To my fellow Nigerians its like have plantain and egg stew in one bite. So if your looking for some more meal prep ideas this will be perfect for you. I hope you enjoy my creation as much as I do. Lets go on a tasteful ride.

Ingredients

1 ripe plantain

4 eggs

1 tomato (chopped)

1/2 of a small onion (chopped)

Pan non stick spray

cupcake pan

1/ tsp of salt

1/2 tsp of black pepper

1/2 garlic powder

1/2 cayenne pepper

1tbsp of coconut oil

1 Habanero (minced)

Preheat oven to 350 degrees

Cut plantain into 1/2 inch pieces. Season with a little salt. Heat up a coconut oil in a frying pan. Sear on one side for 3 minutes each and remove from heat.

Spray cupcake pan with PAM. Take 2 pieces of plantains and mash  (using fingers) into bottom of an individual cupcake space. Making sure to cover the bottom.( See picture below) You should have about 5-6 cups.

Mix eggs, tomatoes, onions, habanero and above spices.

Using a measuring cup pour in egg mixture into each cup, filling it about 3/4 full *

Place in oven and bake for 16- 20 mins. Checking periodically, by poking the middle with a toothpick to see if its fully done.

When done allow to cool and Enjoy

Jerk Shrimp and Lobster Chow Mein

Todays meal was inspired by my Fitfam Juliet. She sent me a picture of a dish that Ayesha Curry made. She asked me to recreate it, I gladly accepted. I decided to recreate the dish and make it #fitfam approved. From replacing the chow mein noodles with 100% whole wheat pasta and baking the plantain instead of frying, Fitfam would be proud   Below is a picture of Ayesha’s Dish.

So here goes my take:

Ingredients

Lite Soy Sauce

oyster sauce

1/2 green pepper

1/2 red bell pepper

1/2 lemon

1 lb of shrimps

1-2 Lobster tools

1/2 head of cabbage

1 onion

olive oil

1 package of whole grain linguini

1 ripe plaintain

jerk seasoning

ginger

salt

2 habanero

cayenne pepper

fresh parsley

minced garlic

butter

Let’s Go

First, cook your pasta for about 7-10 minutes until soft, be careful not to over cook.

Baked Plantain

Preheat your oven to 400 degrees .Coat a baking sheet with oil or nonstick oil spray. Cut your plantain in diagonal slices about 1/2 inch thick.  Season your plaintain with salt and black pepper. Place on baking sheet and bake for 7 minutes and flip.

Continue to back for another 7 minutes on the other side. Be carful to watch the color, making sure it doesn’t burn. Place aside

IMG_8810Prep (chop) all your veggies, cabbage, peppers and onions and set aside

Jerk Shrimp and Lobster

Wash and dry your seafood. Season with jerk seasoning, salt, black pepper, ginger and cayenne pepper. In a pan heat up 2 tbsp of oil oil, 1/2 chopped onion, and 2 habanero chopped. for about 2 minutes. Next add in 1 tbsp of minced garlic. Sear for 1 more minute. Add in lobster (shell up) and shrimp. Cook on one side for 5 minutes. Before flipping add in 1 tbsp of butter. Squeeze 1/2 of lemon on top of the seafood . Continue to cook for 5 more minutes until done.(shell turned pink). Set aside

Chow Mein

In a pan heat up 3 tbsp of olive oil. Add cabbage, 1/2 chopped onion, bell peppers, and garlic . Stir fry  for about 3-4 minutes on medium high heat. Next add in 1/3 cup of Lite soy sauce and 1/4 of oyster sauce.

Mix well. Next add in pasta, and stir constantly to blend everything . Continue to stir fry for about 2-3 minutes, top it off with fresh chopped Parsley and cayenne pepper (optional)

Jollof Stuffed Peppers

Who doesn’t love stuffing a bell pepper ? Layered with Plaintain and Spicy goat meat, so yummy. Try this recipe out today and let me know what you think!

Ingredients

1 medium size green bell pepper

½ – 1 cup of Jollof Rice

(Recipe on my blog)

salt and pepper

Preheat oven to 350

Cut ½ of inch off the top of a bell pepper

Coat skin of bell pepper with oil and season with salt and black pepper

Fill the bell pepper with Jollof rice

Place in baking pan

Bake for 20 to 25 minutes

Top with plantain and Goat meat

Enjoy

Plantain Pancakes

IMG_5097 (1)Since it’s national pancake day, I decided to make a fitfam and paleo approved dish. Plantain pancakes are made out of ripe plantains and eggs. No syrup needed, made a natural strawberry purée from scratch. The combination was so yummy. The pancakes tasted like angel cake ha ha. Try this recipe out and let me know what you think.

Tip- the key to a smooth batter is to use very Ripe plantains

Ingredients

Pancakes

2 ripe Plantain

4 eggs

¼ tsp of cinnamon

¼ tsp of nutmeg

1/4 tsp of salt

1 tsp of vanilla

1 tbsp of coconut oil

¼ cup of coconut flakes

Strawberry Glaze

½ cup of strawberries

1 packet of splenda

¼ cup of water

 

Combine all ingredients for pancakes except the coconut flakes, and blend until smooth.

Heat up frying pan and put in the coconut oil.

Once heated pour out desired amount of pancake mix into he pan

Lower the heat to medium- high

After 1 minute check the bottom of the pancake, if brown flip over and cook the other side.

 

 

Syrup

Blend strawberries and water

Blend until smooth

Pour into a small pot and begin to simmer on medium heat ]

Add a dash of cinnamon and nutmeg

Add in splenda

Top you pancakes with the syrup and enjoy

Sprinkle coconut flakes, cinnamon, and whipped cream for an added touch
